Minestrone is full of a healthy version of the soup.
It can be made with healthy legumes, green leafy spinach, vegetable, plenty of herbs, and a handful of pasta. But it's a very healthiest combination and kids-friendly soup that combines lots of vegetables and pasta.
And nowadays kids love to have pasta and this soup is the source of vegetables also so kids enjoy they favorite pasta with loads of vegetables.
This recipe makes a big pot of delicious pasta vegetable soup. make it on the weekend for dinner and have leftovers for lunch during the week.
This minestrone you can keep until 2 to 3 days in the refrigerator. The only thing that happens was pasta shells turn more softened and they soaked a lot of broth. So simply what you can do is add more vegetable broth and hot water when you reheat this Minestrone.

This minestrone is one of my favorite kinda soups that I would like to have on weekdays also.
What can you serve with this?
You can have this soup with crusty bread. sopping the broth with crispy bread is one of my favorite ways to enjoy a one-bowl meal. But you can skip this bread so also can enjoy only soup that's also my favorite kind of thing to do n. Love to have without any bread or something.
How to make this amazingly delicious soup.
Start by sauteeing vegetables and add potatoes to a big pot one by one in olive oil over medium heat. Let it cook for 3 minutes and next add carrot and saute again and let it cook again for 3 minutes.
Now add all spices and herbs to this vegetable and add vegetable broth. Add pasta also in this. Stir well. Cover it with a lid. And simmer for 30 minutes and stir occasionally.
Check the seasoning and salt and pepper, to taste.
Garnish individual bowls with parmesan and fresh basil leaves( optional). Or you can have it as it is also.
This soup is simply delicious that won't mind it to make again and again.
This is a great one-pot soup that good enough for amazing company or a simple meal that you would like to prefer for lunch, or dinner, or any day of the week, or cold time.
Ingredient:
Cabbage
Carrot
Pasta
Vegetable broth or water
Potato
Olive oil
Dried oregano
Seasoning
Crushed Red chili flakes
Fresh ground Black pepper
Salt
Method:
Heat the olive oil in a large deep heavy bottom pot.
Add chopped potato and saute for 3 Minutes.
Now add carrot also and saute again for 3 minutes.
At this stage add vegetable broth or water to it.
And add pasta shells also. You can use any kind of pasta in it. I used here penne pasta. You can with your choice.
Add all spices together and taste it.
Simmer for 5 minutes more.
And now add cabbage to this and mix everything nicely.
Now cover this pot with a lid and simmer for another 20 minutes. Until pasta is done.
Taste it before you serve.
Serve hot.
