Have you ever tried chickpea salad before? no. Don't worry I m sharing here my favorite salad recipe. I love this recipe It contains so much flavor in just one recipe.



You can make this for lunch or as a side dish. This healthy recipe is so full of flavor and very high in protein and the perfect menu for the weekdays. And it's so easy so you can make it for 2 to 3 days also.

Here is a simple chickpea salad I could eat every single day. It's so colorful recipe that even kids can enjoy and they eat whatever color they like with this chickpea.

As food bloggers when we decide on something to try so after we can't wait too long and once we try and we feel it's worth sharing amazing recipes with our followers who dearly follow us.

So yah here I m with another salad recipe. And this time I m making a salad with chickpea. And you know chickpea is so high in protein so we enjoy the with colorful veggies. You can add more of your choice veggies also. I m just giving you what I used but will give you some other options and also what you can use in this chickpea salad recipe.

This chickpea salad tastes good and they are easy to make one of the satisfy of salad

so why wait let's jump straight to the recipe.

One thing for every salad recipe is so a quick easy and healthy version of our meal. The only difference is how you make the dressing.




Let's discuss the ingredients:

  • Chickpeas: You can use canned chickpeas also. Or regular ones. Just soaked overnight and let it cook until it soft in pressure cooker or insta pot

  • Tomatoes: I used here cherry tomatoes but you can use regular tomatoes also just make sure you cut them into small sizes.


Optional ingredient:

  • Olive oil

  • Bell peppers

  • Onions

  • Fresh basil or parsley


Start with ingredients:

  • Chickpeas

  • Cucumber

  • red radish

  • Cherry tomatoes

  • Purple cabbage

  • lettuce



Dressing:

  • Olive oil

  • Lemon juice

  • Salt

  • pepper

  • Dijon Mustard

Just mix well everything nicely and our dressing is ready.


Method.

  • In the big bowl Arrange everything nicely next to each other.

  • Now pour over the dressing on the salad.

  • Mix all together well. So all veggies are very well combined with dressing and all flavors mix well together nicely.

  • Now serve.

  • Enjoy.
